Perhaps it's a form of partial albinism. Not all albinoes or near-albinoes have pink eyes; the famous white tigers have blue eyes (and black stripes or faint brown/gray stripes). I know my blue merle Shelties have patchy coats and usually have blue or partly blue eyes. This is normal for the color.

ChrisAnthemum, his other eye is also blue yet surrounded by the chestnut coloring. I have no clue why both are blue. Stunning though.
