Caption: Before I got in the car to head back to Denver, I had Bud hold up this crazy potato he got out of the garden. Never seen one like it. We're going to have LOTS of purple potatoes this year. They came up all over the garden, volunteer.

LOL, Chrissy..I can see that, for sure!
I never thought of that, Gayle..about the red
potatoes, but the inside of them is white, the
purple potato is purple all the way through. I
had never seen them until a few years ago when
a guy gave Bud some to plant in the garden. They
have produced a lot of 'taters since then!

They taste pretty much the same. They cook faster
for some reason, so they are great for pan-frying,
and if you mash them, they are lavender colored,
but taste just like other mashed potatoes. Thanks

Uh that would be a tough tator to peel Kat LOL !!! I've never seen a purple potato before, do they taste the same as Russets or Idahos?

help, and then it will get mashed and eaten, I
would imagine! We usually get some pretty crazy
carrots, too! I don't know what goes on under
ground, but it sure can make for some interesting
veggies!
