There are different types of persimmons. This is the rounder "fuyu" persimmon that can be eaten fresh while still hard and crisp like an
apple. They have a very few dark seeds to watch out for. I eat peels and
all sliced. I just tried drying some and they are delicious that way. I'm SO glad we planted a fugu persimmon. The other kind has to be very soft before you don't pucker up with a bitter taste. They are good for cooking/baking but I prefer the fresh ones.

Actually this tree is not mine and it is the pear shaped variety. My own tree (not this picture) has the round ones. (fuyu) they are all lovely trees to enjoy..for their fall color.
