UPDATE: I tapped a couple of test trees yesterday, and don't you know that the storm that was gonna slide south is now trending more northerly. It never fails that when i tap trees i get snow!
Nevertheless, its about that time of the year where i start my annual maple syrup making. This year i've upgraded my barn with a reverse osmosis machine which takes 75% of the water out of the sap before i even have to process it(much more energy efficent). I boil it off in a 2x6 wood-fired evaporator. Its very labor intensive but only lasts a little more than a month and its great to preserve traditions. 4 Years ago i started because i was cleaning out my grandfathers attic and found taps which he said where his fathers fathers. dating into the early 1800's. Intrigued i looked up info went around marked trees and began what has become slightly more than a hobby. I've gone from 9 trees to over 200 this year. I have spent all summer cutting and splitting wood and gathering free 5gallon pails from local food services. I hope its a good year! i anticipate making roughly 40-50 gallons of syrup if all goes well, lastyear was not a good year for me.
