Wow...busy day. Haven't had time to post much and it's nearly 6 pm.

Got a ham bone cooking with some great northern beans, some rice to cook later and cornbread for dinner.
Maybe some greens...

That's for sure, it'd be a shame if they weren't right. I'll try to look for some info and recipes when I have a chance.

Me too. I'd hate to ruin them by cooking them wrong. I usually just use cajin breading and deep fry or flash fry snapper and its awesome. Not sure that would be best with these. I'm thinking grilling or baking is the only option, but I just want to do it right.

Thanks for the large snapper cooking suggestions. The banana leaf idea is intriguing, but we don't have banana trees around here.

I've wondered how the taste will compare to smaller snapper too. From my experiences halibut fishin in AK, I know the 20-40 pounders are the best eating. I've caught them over 100 lb and they weren't as good, though still nice.

Gonna ponder and mull on this a bit.
